Friends Like Me present Chef Os & Farmer Angus’ Farm-To-Table Feast
IMMERSIVE DINING EXPERIENCE AT SPIER WINE FARM WITH CHEF Os and farmer Angus
This event is an immersive farm-to-table dining experience at Spier Wine Farm which includes the opportunity to see the inner workings of the farm. Guests will be greeted at the Manor House with a welcome drink, and will then depart for a guided tour of the farm to see first hand the methods and practices used by resident farmers, Angus and Neil. Guests are then seated to a 3-course menu, prepared by Chef Os, that showcases the seasonal produce available at Spier. The set menu features traditional haute cuisine created with local produce, each course paired with Spier wines.
After a welcome drink and introductions by the chef and farmers, guests are invited to begin the tour. This will be led by the farmers themselves, and will illustrate the methods of farming and cultivation employed by Angus and Neil, and the produce that results. The guests will then have the opportunity to sample some of this produce at the dinner.
- Biltong and iced tea on the tour
- Trio of beef tartare with roast marrow, pickled veg or savoury cheese cake with onion marmelade and pickled veg (choices pre ordered)
- Duo of spiced chicken thigh ballontine and french trimmed leg with root vegetable dauphinoise, seasonal greens and a citrus infused jus
- Mini pavlovas with seasonal fruit and Spier lime curd
Chef Os trained in classical French cuisine at Silwood Kitchen, and subsequently spent time expanding his repertoire through his journeys as a culinary nomad. He has been on various expeditions in this time, working as a yacht chef in the Med, a private chef all over Europe and a food tour leader from Barbados to Bombay.
Currently Chef Os is working as a private chef as well as hosting outdoor food experiences and other unique once-off culinary events.
Given the antique atmosphere of the Spier Manor House, Chef Os has returned to his classical training to present a menu that is both traditional and exciting, utilising the plentiful produce that Spier creates.
